Right now
morrowind is a wee bit easy.
I mean if I play the game for 5
hours from starting a new char Im so strong I kill everything in 1-2
hits using no cheats at all.
Now Im not looking for a mod
that ruins any cool elements in the game like alchemy or take away
certain items or quest rewards.

that just
looks like more monsters but Im looking for something that makes
enemies harder to kill, harder to level mayby even, something to
make every new level take work and more important
Something
so a quest can actualy be some work and not only 3 people walking up
to be hiting and punching only to go down in one hit each that
almost breaks thier armor and sends them flying.
Something so
a fight might last a little longer than 1 hit.
and ofcourse a
mod that adds a LOAD of new items and monsters and quests and people
and areas wouldnt hurt to.

I would
recommend running a combination of Taddeus' Balancing packs or
Wakim's game improvements, together with Morrwind
Advanced.
This will make the PC harder to level up, the
monsters stronger and more varied.
I dont know if Necessities
of Morrowind clashes with the balance mods (dont see why it should,
but you never know), but if not then this also steps up the
difficulty level somewhat, by making you eat, drink and sleep at
regular intervals or pay a penalty (quite a considerable penalty)

Wakim's game
improvements I definently reccomend! I played the game with it,
and another without it, it makes the game waaayyyy harder, don't go
into the wild without something to heal u...

Ok this seemed
pretty good at first then I noticed that any human in the game could
kill me in one hit when I was lv 1.
This wasnt so bad at
first. I thought that mayby I could train some more before fighting
but then the tribunal expansion added a problem.
The
assassins. Very often when I sleep I hear "you where awakened by a
loud noice" then an assassin strikes me once and Im
dead.
This makes the game pretty much
unplayable.

I agree with
everone else. I would add Puma man's Giants and Combat enhanced.
These two make a great pair and enhance combat will quickly allow
you to change the difficulty of the ones you are fighting.
Diffinitly get Watkins Game enhancements -and Have you ajusted the
difficulty in options

Well, you
could try to sleep indoors in a bed rather than outside. Also, you
said you train before fighting? I hope you don't mean spend money on
a trainer NPC, as that will make the game easier. Level up the old
fashioned way, hard work. If you found the game to hard after
installing those mods, find an easier setting using the difficulty
slider. Maybe it's not just the game is too easy, but maybe you
exploit it too much? Try playing fairly and setup some rules for
yourself, roleplay, etc. there is a lot of advice on these forums.

Well this is just great you
assume one thing after another and then you in the post, reply to
your own assumptions and then lecture me about it.

There is a mod
available that cuts down on the frequency of those annoying DB
attacks when the PC is at a low level and lets the number of attacks
increase as the PC's level increases. Telesphoros has it on his
list. Wakim's makes the game very different and
difficult. Adventures adds to that. LDone's thief improvement
mod makes stealth much more fun/difficult MorrowindComesAlive
adds the occassional nasties in towns and countryside who attack you
for no good reason at all. While nowhere near complete, the
Undernourished NPCs mod will, when finished, make the defenders of
valuable things have stats more inline with the valuable things they
are defending. Necessities of Morrowind because it makes sleeping
and drinking and eating into mandatory activities will slow the
course of the game. Any of the rational wildlife type mods will
make it so you have to go looking for animals to kill, the healthy
ones will ignore you. Of course the mods that add strong
creatures all over the island can make life "hectic" and levelling
faster.
